This two-stage ageing process gives the wine its fascinating combination of freshness and nutty complexity, with years in the traditional solera system adding depth and character.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eToasted almond, hazelnut and orange peel meet dried herbs, a little caramel and a distinctive savoury note. Bone dry, with a lovely richness of flavour but none of the heaviness, it finishes long, complex and gently saline. Serve lightly chilled with aged Manchego, jamón Ibérico, roasted nuts or mushroom dishes.
