Grapes: 75% Corvina Veronese, 20% Rondinella and 5% Molinara
From the Valpolicella hills of Veneto, Michele Castellani is a family-run estate with deep roots in the region, known for traditional Amarone crafted with precision and patience. Their focus is on preserving the richness of the style while maintaining balance and drinkability.
The “Cinque Stelle” Amarone is made using the classic appassimento method, with grapes dried after harvest to concentrate sugars and flavors before fermentation. The wine is then aged in oak to develop depth and integration, allowing the natural power of the fruit to evolve into a more layered, structured expression.
Rich and enveloping, it shows notes of dried cherry, fig, and plum, with hints of cocoa, spice, and sweet tobacco. The palate is full-bodied and velvety, with concentrated fruit balanced by firm structure and a warming finish. A natural match for braised meats, game, or aged cheeses.
