Founded in 1888 in the foothills of the Italian Alps, Bordiga is one of those wonderfully traditional producers that has never felt the need to reinvent itself. Based in Cuneo, Piedmont, the distillery is best known for its vermouths, bitters and liqueurs, made with a distinctly old-school approach and a healthy respect for quality ingredients. Its Maraschino is a lovely example of why the classics have stuck around.
Unlike the bright red cherries you might find perched on a sundae, Maraschino is a clear cherry liqueur with a surprisingly complex personality. Bordiga uses Marasca cherries to create a spirit that captures more than just the sweetness of the fruit, with the distinctive almond-like character associated with cherry stones adding another dimension.
Delicate cherry, bitter almond and a little citrus peel come together with gentle floral notes and a subtle herbal edge. Sweet, certainly, but with enough complexity to keep things interesting and a lovely lingering finish. An essential ingredient in classics like the Aviation, Last Word and Hemingway Daiquiri, although a small splash over vanilla ice cream wouldn't be a terrible idea either.
