Grapes: 100% Chardonnay Domaine Christophe & Fils is the work of Sébastien Christophe, who started out with little more than a small parcel of family vines and an ambition to make Chablis under his own name. More than two decades later, his cellar includes everything from Petit Chablis to impressive Premier Crus, but throughout the range, there’s a refreshing sense that the vineyard, rather than the winemaker, gets the final word. The 2024 Chablis sits right in the sweet spot of the domaine. Made without oak, it has more substance and depth than the Petit Chablis while retaining the brightness and energy that make young Chablis so irresistible. Crisp apple, lemon, and pear come first, followed by a subtle floral note and the cool, mineral character that Chardonnay finds so naturally here. There’s a little extra weight through the middle before the acidity snaps everything back into focus, leaving a clean, mouthwatering finish. Seafood is the obvious answer (oysters, scallops, simply grilled fish) although we’d be perfectly happy drinking this straight from the fridge with nothing more than a bowl of salty chips.
