“Ceps Nous” — meaning “new vines” — is Pasanau’s modern expression of Priorat: dark, structured, and mineral, yet fresh and finely tuned. This bottling shows how altitude can lend grace to power, turning what might be bold into something beautifully proportioned.
The grapes are fermented in stainless steel before aging in a combination of French and American oak, creating a seamless weave of fruit and structure. Aromas of blackberry, plum, and graphite open the glass, followed by hints of wild herbs, cocoa, and a faint stony edge. The palate is dense but composed — ripe black fruit layered with spice and slate-driven minerality. Firm tannins and lively acidity carry through to a long, savory finish.
