Grapes: 100% Cabernet Franc
Domaine de la Noblaie once housed literal Crusaders and is now home to Jerome Billard and family. Jerome interned at Chateau Petrus in Bordeaux and worked for Dominus in California before returning to France and focusing on Cabernet Franc.
The parcel's grapes are meticulously harvested by hand and fermented in stainless steel, oak, and even chalk. The wines are certified organic and use only indigenous yeasts to truly showcase Chinon terroir. Jerome's goal is to create a Cabernet Franc that is perfectly balanced without green or vegetal notes.
This Cabernet Franc is a versatile food wine, pairing well with grilled proteins and savory herbs. Think lamb with rosemary and thyme for dinner, or pair it with the perfect French lunch - a baguette and some brie!
