The 2023 vintage, shaped by a steady growing season and cool nights, radiates finesse and clarity from the first sip.
The fruit is whole-cluster pressed and fermented with native yeasts, then aged in fine-grained French oak (a modest portion new) before a brief settling in stainless steel. The result is a wine that marries texture and tension — all chalk, citrus, and calm intensity.
Aromas of lemon blossom, white peach, and wet stone open into layers of hazelnut, green apple, and saline minerality. The palate is linear yet deep, carrying a quiet richness that feels more light than weight. The finish lingers in a whisper of chalk and sea air — precise, elegant, and unmistakably Roulot.
