Grapes: 100% Aligoté 

Jean-Marc Pillot draws from his parcel in Remigny (planted in 2000) to show what Aligoté can do in a great grower’s hands. It’s a humble Bourgogne grape, but there’s nothing ordinary about it — Pillot brings crispness, terroir, and energy to this white that often plays second fiddle.

The 2021 is vinified and aged entirely in stainless steel, no oak to mask its edges, letting freshness and clarity lead the way.

You’ll notice a brisk acidity on the nose: preserved lemon, touches of sage, musk melon, with a saline edge pushing through. On the palate it’s nimble, pure, clean — orchard fruit and citrus interplay, the finish long, mouthwatering, urging you to take another sip. This is perfect for seafood, shellfish, summer salads, or simply as a refreshing aperitif.
