Jean-Marc Pillot is the fourth generation of his branch of the Pillot family to tend vineyards in Chassagne Montrachet. He joined his father, Jean, in 1985 to learn the craft of “vigneron”. After six years of working side-by-side, Jean-Marc assumed the direction of the domaine in 1991 with the assistance of his wife, Nadine, and his sister, Beatrice. There is little-to-no debate that the family’s finest wines originate from their Chassagne-Montrachet holdings. This is their specialty.
The 2023 Chassagne-Montrachet Blanc comes from seven estate parcels — a true snapshot of the appellation. Fermentation is carried out with native yeasts and the wine is aged partly in oak (mostly older barrels) and partly in stainless steel. This approach brings texture and roundness without weighing down the fruit, leaving the wine fresh, lifted, and true to its terroir.
In the glass, you’ll find aromas of green apple, pear, and citrus zest, with hints of white flowers and a touch of chalky minerality. The palate is bright and focused, carrying orchard fruit and lemon notes over a sleek, mineral backbone. The finish is long and mouthwatering, with just enough weight to pair beautifully with roast chicken, shellfish, or creamy sauces.
