Adrien Dhondt is one of Champagne’s rising stars, crafting expressive, terroir-driven wines from the Côte des Blancs. Les Terres Fines is drawn from Premier Cru vineyards in Cuis and Chouilly, rooted in chalky soils that give the wine its laser-like precision and mineral depth. First produced by his family in the 1980s, Adrien has elevated this cuvée into a benchmark for modern grower Champagne.
Blended with a perpetual reserve that stretches back to 1986, fermentation takes place partly in oak barrels, partly in stainless steel, before extended lees aging and a very low dosage to preserve purity.
On the nose, it’s floral and bright, with citrus blossom, green apple, and hints of almond and brioche. The palate is taut and crystalline, offering lemon zest, orchard fruit, and chalky minerality carried on a fine, delicate mousse. The finish is long, mouthwatering, and refined, showing both energy and quiet complexity.
This is a Champagne that shines as an aperitif, but also pairs beautifully with oysters, shellfish, sushi, or delicate white fish. It’s a bottle that can be enjoyed now for its freshness, or cellared for added layers over time.
