Grapes: 100% Rolle (Vermentino)
Château Pas du Cerf sits among the hills and forests of La Londe-les-Maures, where the Mediterranean and the rugged landscape give white Provence wines a character all their own. Instinct is one of the estate’s more ambitious whites, taking Rolle (the local name for Vermentino) and giving it a little more time and attention in the cellar.
For the 2025, the focus is entirely on Rolle. A short period of skin contact before fermentation builds flavor and texture, while a brief spell in oak adds another layer without turning this into a heavy, overtly wooded style. The result is a step up in richness from the estate’s Diane Blanc while still feeling unmistakably Mediterranean.
Ripe peach and citrus meet hints of melon, almond, and wild herbs, with a gentle creaminess through the middle. There’s plenty of weight, but a fresh, mineral backbone keeps everything moving into a long, dry finish. A white with enough substance for dinner — try it with grilled sea bass, roast chicken, veal, or a good piece of cheese.
