A traditionalist in the truest sense, Daniel-Etienne Defaix has long been one of Chablis’ quiet masters — a vigneron who favors patience over polish. His Vieilles Vignes bottling comes from old Chardonnay vines rooted deep in Kimmeridgian limestone, producing wines of remarkable texture and mineral purity. Every step, from long fermentation to extended aging on fine lees, is designed to honor the natural rhythm of the vineyard.
The wine spends several years resting in tank before release, developing a subtle richness without losing the sharp, seashell tension that defines great Chablis. It’s an approach that yields complexity and calm — a kind of slow craftsmanship that feels timeless.
On the nose, aromas of lemon oil, white peach, and hazelnut unfold into wet stone and chalk. The palate is taut and layered — citrus and green apple balanced by saline minerality and a touch of creaminess from lees aging. The finish lingers with poise and quiet depth, a hallmark of Defaix’s patient hand.
