Sébastien Christophe started Domaine Christophe et Fils in 1999 with just half a hectare of Petit Chablis planted by his grandfather. Since then, he has quietly assembled vineyards across Chablis’ right bank, building a domaine that remains relatively small and hands-on. Fourchaume is a significant step up in the range, coming from one of the best-known Premier Cru sites north of the Grand Crus.
For the 2023, Christophe gives the wine a little more cellar treatment than his village Chablis. Most of the wine is raised in stainless steel, with a small proportion seeing barrel, adding texture and dimension without turning this into an overtly oaky style. The wine spends around a year developing before bottling.
There’s more breadth here than in Christophe’s straight Chablis: ripe lemon, pear and yellow apple, with a little hazelnut and spice appearing as it opens. The palate has weight and texture, but there’s still that lovely Chablis tension running underneath, pulling everything toward a fresh, savory finish. A bottle that should only get more interesting with a little time; try it with scallops, lobster, roast cod or chicken in a cream sauce.

- For returns of wines which are corked, please re-seal after tasting and return us the (nearly) full bottle. We cannot exchange if the bottle has been consumed.
