At the heart of the storied Chablis terroirs, Raveneau’s “Butteaux” comes from steep, southern-facing parcels within the Montmains belt — a site prized for structure, minerality and depth. Domaine François Raveneau has long insisted on vineyard precision and cellar restraint, making this release an exemplar of their quiet power.
The 2023 vintage was gently pressed, fermented with native yeasts, and matured in old barrels and stainless steel to preserve clarity. No new oak, minimal intervention — the aim is to let the site and vintage speak. This wine holds weight without heaviness, freshness without lean austerity.
In the glass, expect aromas of white peach, green apple, and oyster shell, followed by a subtle almond-skin note. On the palate the texture is electric yet refined: citrus zest, chalky minerality, a hint of hazelnut and a long saline finish that lingers. This is a Chardonnay that invites contemplation — brilliant with lobster, fine seafood, or quietly cellar it for future layers of complexity.
