Grapes: 100% Sauvignon Blanc
Kevin Judd knows a thing or two about Sauvignon Blanc. As the founding winemaker at Cloudy Bay, he spent 25 years helping put Marlborough on the world wine map before establishing Greywacke in 2009. Named after the distinctive grey river stones found throughout the region, Greywacke has become one of New Zealand's most respected wineries, producing wines that explore a more sophisticated side of Marlborough's signature grape.
The Wild Sauvignon is a rather different beast from your typical Marlborough Sauvignon Blanc. Instead of relying on cultured yeasts and stainless steel, the 2024 is fermented spontaneously with indigenous yeasts in French oak barrels, only a small proportion of which are new. The fermentation develops slowly over several months, with time on the lees and partial malolactic fermentation adding richness, complexity and an almost Burgundian texture. The result is a wine that challenges expectations of what Sauvignon Blanc can be.
Ripe peach, citrus and passion fruit meet delicate floral notes, fresh herbs and a hint of toasted spice. The palate is generous and layered, with a creamy texture balanced by lively acidity and an intriguing salty, mineral edge. There's real depth here, but nothing heavy, with a long, savoury finish that invites another sip. Fabulous with grilled seafood, roast chicken, asparagus risotto or goat cheese. A Sauvignon Blanc for people who think they already know Sauvignon Blanc!
