Grapes: 100% Chardonnay

Jean-Marc Pillot is the fourth generation of his family working the vineyards of Chassagne-Montrachet. Known for precision and clarity, he focuses on expressing terroir with elegance rather than weight. “Les Hauts des Champs” comes from vines just outside the Chassagne appellation, delivering exceptional character at Bourgogne level.

The 2023 vintage was whole-cluster pressed, fermented with native yeasts, and raised for a year in stainless steel with a touch of neutral oak. This approach preserves purity while adding just enough texture to round out the fruit.

Bright and inviting, the wine shows lemon zest, green apple, and pear on the nose, layered with subtle florals. The palate is sleek and mineral-driven, with citrus, orchard fruit, and a fine thread of acidity carrying through a clean, refreshing finish. A versatile white Burgundy, perfect with roast chicken, seafood, or soft cheeses.
