Grapes: 100% Palomino Fino
In the coastal town of Chiclana de la Frontera, Manuel Aragón is keeping a wonderfully traditional corner of the Sherry world alive. This family-run bodega has been making wine for generations, with a particular talent for the complex, characterful styles that make us love Sherry so much. El Neto is their Amontillado, a wine that proves there's a lot more to Sherry than something your grandmother kept in the cupboard!
Amontillado begins life ageing beneath a protective layer of yeast known as flor, before continuing its journey with exposure to oxygen. This two-stage ageing process gives the wine its fascinating combination of freshness and nutty complexity, with years in the traditional solera system adding depth and character.
Toasted almond, hazelnut and orange peel meet dried herbs, a little caramel and a distinctive savoury note. Bone dry, with a lovely richness of flavour but none of the heaviness, it finishes long, complex and gently saline. Serve lightly chilled with aged Manchego, jamón Ibérico, roasted nuts or mushroom dishes. A fabulous aperitif, although we'd happily keep drinking it right through dinner.
