Santanera is one of those tequila producers that makes you think about agave a little differently. Founder Pablo Lara puts the plant, and where it was grown, at the heart of each release, working with organically farmed parcels around Jalisco and producing individual batches that capture a particular place and moment. Partida is especially significant: it closes one chapter for Santanera before production moved to the brand’s own distillery.
This limited release comes from seven-year-old organic agave grown on the hillside El Tezontle estate. After cooking in a stone-lined brick oven, the juice undergoes spontaneous fermentation before distillation. The finished tequila then spends 432 days resting in glass rather than oak, developing without picking up any barrel character.
Bright and expressive, with cooked agave at its core, followed by ripe citrus, tropical fruit and delicate floral notes. There’s a lovely earthy quality underneath, with pepper and a little mineral bite bringing freshness to the finish. Despite the higher proof, it feels beautifully composed rather than fiery. This is definitely one to drink neat—and a fascinating bottle for anyone interested in tequila beyond the usual Blanco/Reposado/Añejo conversation.
