Santanera is for tequila drinkers who like to go a little deeper. The Jalisco producer explores how everything from the agave itself to maturation can change what ends up in the glass, and Selección de Bosques turns its attention to one of the biggest variables of all: wood.
Batch 2 from Santanera’s Selección de Bosques series of añejo tequilas further explores the effects of barrel aging using specialty casks crafted in collaboration with renowned French cooperage Tonnellerie Nadalié. This blend of four barrels—each aged for 28 months—was distilled from organic agave grown on the El Llano Grande estate with the sole intent to age. These parcels were planted in April 2016 in potassium-rich soil designed to intensify an agave sweetness that is fully revealed through the influence of new American and French oak.
Made from organic agave and matured for more than two years, this is a richer and more contemplative side of Santanera. The extended aging rounds out the spirit and adds layers of spice and toast to the naturally earthy sweetness of cooked agave.
Dark caramel, roasted agave and vanilla open into toasted nuts, baking spice and a little dried fruit. It’s full and silky without becoming overly sweet, with a warming, savory finish that hangs around beautifully. Skip the cocktail shaker for this one. Pour it neat, preferably after dinner, and give it some time in the glass.
