Don Fulano is a family affair, produced by the Fonseca family in the highlands of Jalisco, where they've been growing agave for generations. Unlike many tequila brands that leave production to someone else, the family controls everything from the fields to the bottle. The result is tequila with a real sense of identity, made for people who appreciate what agave can taste like when it's given the attention it deserves, and with zero additives.
Made at the family's own distillery, the tequila spends around 30 months ageing in French oak, developing a richer, more contemplative personality while retaining the character of the original spirit. The extended maturation brings depth and complexity, but this is still very much a tequila rather than an attempt to imitate an aged whisky.
Roasted agave, caramel and dried orange peel meet toasted nuts, vanilla and a little baking spice. There's a lovely rounded texture, with layers of dark chocolate, gentle oak and a savoury note that keeps the sweetness in check. The finish is long, warming and beautifully balanced. Definitely one to enjoy slowly, preferably neat and after dinner, although we wouldn't object to a particularly luxurious Old Fashioned.
